Best Potato Soup Ever
6-8 cups russet potatoes – cubes
1 stalk celery – chopped
2 medium yellow onions – chopped
1 stick butter
1 12oz can vegetable broth
2 12oz cans of diced potatoes
2 12oz cans evaporated milk
½ lb Velvetta – maybe less
3Tbsp corn starch
Some hot water
Salt, pepper
In huge pot combine broth, complete contents of canned potatoes, evaporated milk. Boil and mash potatoes. Add chunked potatoes and cheese and low boil.
Large sauce pan braize onion and celery in butter til clear. Add water and corn starch mixture and boil. Add to huge pot and salt and pepper. Simmer until tender.
Should add carrots, maybe corn.
